2022 Intern - Food & Beverage, Destination Kohler Work Mode: Onsite Location: Kohler, WI Opportunity Destination Kohler Food & Beverage interns will rotate around our various outlets focusing on both Front of the House and Back of the House operations. Interns will have the opportunity to see all aspects of F&B Operations including service, associate training, inventory management, associate management, operating procedures, and will have exposure to participating in projects such as menu development, specials dinning events, Ryder Cup, and financial planning. Interns will also be allowed opportunities to participate in workshops with the Food & Beverage Director, Hotel General Manager, Accountants, and other department leads within Destination Kohler. Job Duties * Monitor the restaurant floor & leading communication between FOH & BOH * Monitor and execute all food and beverage orders and ensure the quality and appearance of the presentation * Train in all positions of the restaurants in order to have a better understanding of each position including both BOH and FOH. * Learn how to write schedules, handle cash, office reporting and Social Media * Assist the outlet manager with cover forecasting, scheduling, payroll & labor controls * Lead opening and closing procedures of assigned outlet * Manage inventory levels to include: daily product requisition requests, minimizing waste and spoilage, and conducting inventory counts * Assist department managers with any special assignments * Conduct pre-shift meetings for the AM & PM staff members * Attend weekly Food & Beverage staff meetings and/or team meetings as needed Specific Responsibilities * Assist management with daily administrative tasks including but not limited to purchasing, ordering, invoicing, scheduling, records control and filing. * Accurately process all new hire and employee change paperwork in a timely manner. * Assist in reconciling all operational paperwork including but not limited to guest receipts and vendor invoices. * Work with staff and management team to ensure proper cost controls and inventory levels. * Greets guests and presents them with the menu. * Informs guests about the special items for the day and menu changes if any. * Suggest food and beverages to the guest utilizing appropriate methods to upsell. * Take food and beverage orders from the guest and accurately enter into Point of sale (POS) system. * Process payment transactions. * Clear and reset table settings and linens, as needed. * Communicate to the guest and provide assistance with questions. * Coordinate with restaurant staff to ensure smooth operation and guest satisfaction. * Assist with food and beverage service per the course of order. * Observes guests and ensure their satisfaction with the food and service. * Promptly respond to guest with any additional request. * Prepare mixed drinks for service to your customers table (must be 18 or over and licensed). * Understands and can communicate products and services available at the resort. * Assist with stocking and maintaining the restaurant par stock levels and side station. * Help other areas of the restaurant. * Training restaurant front of house staff. * Assist with overseeing the dining room flow and ensuring proper distribution of assigned stations. * Resolve escalated guest concerns. * Create and execute special projects and assignments. * Assist in answering telephone calls from guests. * Perform the responsibilities of Servers, Bartenders, and Host/ess as needed. * Cross-trained to work in more than one outlet as needed. Skills/Requirements * Currently enrolled in a four year college program with an emphasis of study on Hospitality or Resort Management * Strong academic performance with a 3.0 GPA or higher * Strong organizational, leadership and communication skills Applicants must be authorized to work in the US without requiring sponsorship now or in the future.
